Holiday Soup

'tis the season for delicious comfort food. With temperatures dropping, it is important to keep our bodies warm and some soup is a great way to do it. Nourishing your body is important and we know that it can be hard to keep a heathy diet over the holidays with chocolate and tasty stuffing on the table. Life is about balance, and this green soup is a great way to eat vegetables over the holidays. 




(Serves 2-4) 
2 cups of vegetable broth
1 ½ cups of frozen spinach
2 cups frozen peas
1 cup frozen broccoli
Small slice of ginger- chopped
Half of a small onion- chopped
1 apple- chopped
2 tsp Paprika
2 tsp Turmeric
½ tsp cinnamon
½ tsp nutmeg
½ tsp pepper
In a large pot drizzle oil of your choice and simmer oinions and ginger. After 5 minutes of simmering, add the rest of the ingredients, simmer for 20 minutes- stir occasionally. Let soup cool for 5 minutes. Dump the soup into a blender, and blend until smooth. Pour the soup back into the pot and serve.
